White bean chicken chili

WHITE BEAN CHICKEN CHILI

METHOD:

  • Coat chicken with oil and place at bottom of slow-cooker.
  • Dice vegetables, then add to cover chicken.
  • Stir in seasoning.
  • Cook for 3-4 hours on high.
  • Shred chicken with tongs or fork.
  • Add navy beans, stir, cook until warmed. 
  • Serve with fresh cilantro.
  • Makes 6-8 bowls. 

 

INGREDIENTS:

  • 1 large onion
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 tomatoes 
  • 1 LB organic boneless, skinless chicken breasts 
  • 1.5 tbsp cumin
  • 1 tsp sea salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 2 tbsp avocado or extra virgin olive oil
  • 4-6 cups soaked & cooked dried navy beans
  • (You may use 3-4 cans of navy beans if you are not following GAPS.)
