Strawberry Waffles

GF STRAWBERRY WAFFLES

METHOD: 

  • Turn waffle iron to medium heat.
  • If using whole oats, blend in bullet or processor to make flour.
  • Mix flour, baking soda, salt, cinnamon, protein powder, and peptides in a large bowl. 
  • In separate bowl, mix together eggs, milk, vanilla, oil, and vinegar. 
  • Combine wet and dry ingredients, stir until combined. 
  • Let batter sit for 1 minute.
  • Grease waffle iron to prevent sticking.
  • Pour batter into waffle iron per 1/4 c. 
  • Top with fresh strawberries & strawberry syrup. 
  • Serves 3-4.

INGREDIENTS: 

  • 1 c gf oats (or oat flour) 
  • 1/3 c coconut flour 
  • 1/2 tsp baking soda
  • 1/4 tsp salt 
  • 1/2 tsp cinnamon 
  • 1 tbsp vanilla protein powder (optional)
  • 1 tbsp collagen peptides (optional) 
  • 2 eggs
  • 1 c milk of choice (I used almond) 
  • 2 tbsp coconut oil 
  • 1 tsp vanilla 
  • 1 tbsp apple cider vinegar 

STRAWBERRY SYRUP:

  • 1 large handful fresh strawberries (washed and sliced) 
  • 1/2 tsp vanilla
  • 1 tbsp collagen peptides (optional) 
  • Dash of cinnamon
  • Natural sweetener to taste (optional) 
    • Heat ingredients in small pot on medium-low heat.
    • Stir well to mix and break down strawberries until smooth.
