Homemade Samoas Cookies (GF, DF, RSF)

HOMEMADE SAMOAS COOKIES (GF, DF, RSF)

METHOD: 

  • Preheat oven to 350 F.
  • Cover a baking sheet with wax paper and spread coconut flakes evenly to bake for 7-8 minutes or until golden brown.
  • Boil dates in small saucepan for 10 minutes, then drain. 
  • Add to food processor or blender and pulse until smooth. 
  • Add almond flour, toasted coconut flakes, salt, and vanilla, pulse until blended. 
  • Roll dough into balls, then flatten.  Cool in freezer for 5-10 minutes, then poke hole through with a straw. 
  • Combine cacao, coconut oil, honey, and vanilla in saucepan on low-medium heat until smooth. 
  • Dip cookies into chocolate sauce and drizzle top. 
  • Freeze until chocolate is harden.
  • Serve chilled.

INGREDIENTS: 

  • 1  c pitted dates 
  • 1/2 c almond flour
  • 1/2 c unsweetened coconut flakes, toasted
  • 1/8 tsp sea salt 
  • 1/2 tsp vanilla
  • 1/4 c cacao (or cocoa) 
  • 1/4 c coconut oil 
  • 1/4 c honey
  • 1/2 tsp vanilla
