PUMPKIN GRANOLA
METHOD:
- Preheat oven to 350F
- Heat small saucepan on low-medium heat
- Stir together wet ingredients in saucepan
- Add pumpkin pie spice and dash of salt
- Mix dry ingredients (minus the quinoa and flax seeds) in a large bowl
- Pour wet ingredients over dry and mix well until fully coated
- Mix in quinoa and flax seeds
- Cover a baking sheet with wax paper and spread out thin layer of granola
- Bake for 40-50 minutes, stirring granola every 20 minutes
- Cool, keep in tight container for freshness
INGRDS:DRY
- 1.5 c oats
- 1 c raw pecans
- 1/2 c slivered almonds
- 1/4 c quinoa
- 1/4 c raw pumpkin seeds
- 1/4 c flax seed
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- dash of salt
INGRDS:WET
- 1/3 c organic pumpkin puree
- 1/4 c honey
- 1/4 pure maple syrup
- 1/4 c extra virgin olive oil (or coconut oil)
- 1 tsp vanilla
