Pumpkin Granola

PUMPKIN GRANOLA

METHOD: 

  • Preheat oven to 350F
  • Heat small saucepan on low-medium heat
  • Stir together wet ingredients in saucepan
  • Add pumpkin pie spice and dash of salt
  • Mix dry ingredients (minus the quinoa and flax seeds) in a large bowl
  • Pour wet ingredients over dry and mix well until fully coated
  • Mix in quinoa and flax seeds 
  • Cover a baking sheet with wax paper and spread out thin layer of granola 
  • Bake for 40-50 minutes, stirring granola every 20 minutes
  • Cool, keep in tight container for freshness

INGRDS:DRY

  • 1.5 c oats
  • 1 c raw pecans
  • 1/2 c slivered almonds
  • 1/4 c quinoa
  • 1/4 c raw pumpkin seeds
  • 1/4 c flax seed
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • dash of salt

INGRDS:WET

  • 1/3 c organic pumpkin puree 
  • 1/4 c honey
  • 1/4 pure maple syrup
  • 1/4 c extra virgin olive oil (or coconut oil)
  • 1 tsp vanilla
