Fiesta Slow Cooked Chicken

FIESTA SLOW-COOKED CHICKEN

METHOD:

  • Coat chicken with oil and place at bottom of slow-cooker.
  • Dice vegetables, then add to cover chicken.
  • Stir in seasoning.
  • Cook for 3-4 hours on high.
  • Shred chicken with tongs or fork.
  • *Adding navy beans to leftover chicken will make a delicious white bean chili!* 

 

 

 

 

INGREDIENTS: 

  • 1 large onion
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 tomatoes 
  • 1 LB organic boneless, skinless chicken breasts 
  • 1.5 tbsp cumin
  • 1 tsp sea salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1 tsp oregano
  • 2 tbsp avocado or extra virgin olive oil
