3 INGREDIENT PANCAKES
- 2 eggs
- 1 ripe banana
- 3 tbsp coconut flour
- [optional] dash of cinnamon, vanilla, salt
- Heat 2 tbsp coconut oil in skillet over medium heat.
- Whisk eggs in small bowl.
- Mash banana into eggs.
- Stir in coconut flour and dash of optional cinnamon, vanilla, and salt.
- Pour batter into skillet in, flip gently using two spatulas if needed.
- Makes 2-3 pancakes.
